10 Keto Breads You Can Make in a Cast Iron Skillet


Bread was the first thing most of us missed after cutting carbs, and the store-bought keto loaves at $9 a bag rarely earn the money. We bake ours in a 10-inch cast iron skillet, because the heavy walls hold heat long enough to set a crust on almond and coconut flour doughs that would otherwise go pale and soft. Below are ten recipes we make on repeat, some baked right in the pan and some that just belong next to it.

Why Cast Iron Changes Keto Bread

Cast iron changes keto bread by fixing the one problem low-carb doughs always have: no gluten, so no structure. Wheat bread traps steam in an elastic web and climbs. Almond flour has nothing to climb with, so it relies on eggs, whipped whites, and heat.

That last one matters more than people think. A preheated skillet at 375°F transfers heat into the batter fast, which sets the outside edge before the middle collapses. A glass dish takes several minutes to catch up, and by then the crumb has already slumped.

  • Pull bread at 200 to 205°F internal. Almond flour is done on the outside long before the center is. An instant-read thermometer costs $15 and saves a lot of wasted eggs.
  • Cool in the pan for 10 minutes, then move to a rack. Leave it longer and residual heat steams the crust soft.

Psyllium is the one people get wrong most often. Buy whole husk, not powder, unless the recipe specifically calls for powder, and expect a purple-gray tint from some brands. It is harmless. It also means your dough will look strange for about a minute before it comes together.

Storage and Reheating

Storage decides whether your effort was worth it. Almond flour bread has no preservatives and real moisture, so it molds in about four days on the counter.

  • Fridge: wrap in paper towel, then a bag. The towel catches condensation. Good for 7 days.
