1. Heat a 10.5″ cast-iron skillet over medium heat.2. Add oil, onion, and garlic; cook 4-5 minutes until soft.
3. Add tomatoes, chipotle, salt, and oregano; simmer.
4. Cover and cook 10 minutes, stirring, until tomatoes are soft. Blend until smooth (immersion or regular blender).
