At first, it feels like a good problem to have. You grate one for dinner, slice another for the grill, and tell yourself you’ll figure out the rest tomorrow. Then tomorrow comes, and there are still four zucchini sitting on the counter.

Our most-cooked zucchini recipe, hands down. You spiralize the zucchini, then toss it with a creamy sauce, sausage, sun-dried tomatoes, and spinach. One pan, about half an hour, done. We reach for this on the nights nobody wants to think.
Keto Zucchini Lasagna
Thin zucchini strips do the job pasta used to. You get the cheese, the sauce, the whole comforting mess, minus the carbs. One tip we learned the hard way: salt the zucchini and let it drain before building the layers, or the bottom will turn to soup.


Keto Stuffed Zucchini Boats
Cut the zucchini lengthwise, hollow out the middle, and fill it with seasoned meat and cheese. That’s the whole idea. They portion cleanly, they prep ahead well, and the whole thing bakes in one dish. Good for a Tuesday, good enough for company.

Zucchini Enchiladas
No tortillas. Thin planks of zucchini get rolled around the filling, then baked under enchilada sauce and a lot of cheese. It scratches the Tex-Mex itch and stays keto. Drain the zucchini first, and the rolls won’t fall apart on you.
Zucchini Noodles with Shrimp
This is our 20-minute answer to a busy weeknight. Zucchini noodles, garlic butter, shrimp, and not much else. It tastes like summer, and it packs up fine for lunch the next day, which is honestly half of why we make it.


Zucchini Frittata
When we’ve got zucchini going soft in the drawer, this is where it ends up. Eggs, cheese, zucchini, into the skillet. Make it Sunday, and you’ve got breakfast sliced and ready for most of the week.
